PEEPS!


I LOVE EM!!! "Peeps" are one of the best things about Easter Candy. Sure, you got your jelly beans, your Creme Eggs, but "Peeps" are just so easily portable and they come in cool shapes. If you don't want to get out in the crowd at the store to grab some...you can make them at home...perfect for some time with the kids!

Marshmallow "Peepz" by Chef Francisco Migoya
Yields about 30 pieces

Ingredients (Many measuring spoons have the "gr" measurment:)

300 gr. egg whites, room temperature
450 gr. sugar
150 gr. corn syrup
150 gr. water
15 gr. powdered gelatin, bloomed in
90 gr. cold water yellow food coloring , as needed
100 gr. confectioner's sugar combined with 100 gr. cornstarch

For the yellow sugar:
200 gr. granulated sugar
Yellow food coloring, as needed


Directions:

1. Line a sheet pan with parchment paper.

2. Sift confectioner's sugar and cornstarch mix over prepared pan. Combine sugar, corn syrup and water in a small pot. Over high heat, cook to 311 F. While sugar reaches this temperature, place egg whites in a small mixing bowl and whip on medium speed. Once sugar reaches the desired temperature, remove from heat and mix in bloomed gelatin, stirring vigorously with a whisk.

3. Increase mixer speed to high and whip egg whites until they form stiff peaks. Pour sugar and gelatin mixture down the side of the bowl while the machine is running. Continue to whip until meringue cools.

4. Once cooled, stir in food coloring. Add until you obtain a bright yellow color. Pour into a piping bag (or large Ziploc bag) fitted with a plain piping tip.

5. Pipe onto prepared sheet pan. Immediately after piping, sprinkle yellow sugar on top.

6. Let marshmallows set at least 2 hours.

7. Using melted chocolate and a toothpick, paint the eyes on the "peepz."

8. Reserve in a dry airtight container.

Twin

March Madness

Anything he can do you can do better...

Yesterday, I spent a good bit of time watching the NCAA Tournament Selection Show to see where Tennessee landed. Chances are your husband did the same (in between flipping the channels for the NASCAR Race. )

Then, today, he most likely spent part of his day filling in a NCAA Basketball Tournament Bracket...trying to predict the winners...who will be in the Final Four...and win the National Championship.

You may have no knowledge of college basketball, but that doesn't mean you can't challenge your husband or your office for the best bracket!

Actually, you should go for it! All you have to do is grab the paper...cut out the bracket...or print one off the computer (Click Here for a Bracket)...and draw names out of a hat...you'll probably win!

I'd love to know your progress as the tournament gets going. The first round starts on Thursday!

Technology Meets Nature

I have to say that this project is just wonderful and beautiful!

If your kids like to see nature in action, but don't have much of a chance to get outside to explore. They can use the computer for an amazing expedition to see a Mommy Bald Eagle protect her nest that will soon bring a new Bald Eagle into the world.

The web cam is online 'round the clock. So, you may log-in at any time and see the images from a pine tree 70 feet off the ground, and just 45 feet away from the nest. However, you would never know it by the picture. It's like you are next door neighbors.

You are only allowed 2 minutes each turn...but you can come back as many times as you want. I've logged several minutes, and to me, it's breath-taking. It's like watching a Discovery Channel film --LIVE! I love it!

New Day--New Coffee Study

If that's sounds like you in the morning, you might be surprised by what you read next:

A new study is saying that the coffee you have in the morning may not be the pick-me-up you think it is. WHAT?!?!?!

Yes, researchers say all the coffee does is replace what caffeine level you lost overnight, but doesn't make you more alert than normal.

Apparently, the boost from caffeine in the morning that you "seem" to receive is just the caffeine working to reverse the process of your caffeine level dropping from sleeping.

Experts went on to say that only if you have avoided coffee for a while, will you be more alert from the caffeine.

--Makes me want to say...uh...yeah, I avoided caffeine for my 6 to 8 hours worth of sleep (if that many...) that's why it works. LOL!--

PS-- Other studies have found that moderate coffee consumption of four to five cups per day is safe and does have a beneficial effect on alertness and performance even in regular coffee drinkers.

TV Shows- So easy, a caveman can do it!

Geico has produced these ads with cavemen--some of which I think are a complete stitch. Any, of course, their slogan is "So easy, a caveman can do it."

Well, these commercials have apparently sparked some creative minds, and the cavemen are now being considered as characters for a TV show!!! The idea is one of 14 pilots that will be produced by Touchstone Television this spring.

The pilot will feature the cavemen as they "struggle with prejudice on a daily basis as they strive to live the lives of normal thirty-somethings in 2007 Atlanta."

The advertising copywriter who helped create the "cavemen" ads is writing the pilot, and this by no means guarantees the show will make it on the air, but it is a unique possibility.

PS-Shameless Advertisement: Went by Scratch Bakery last night, and not only took home a lot of wonderful bread...but had a freshly made veggie pizza that was out of this world (Chipotle Creme Base!!!)
