
I LOVE EM!!! "Peeps" are one of the best things about Easter Candy. Sure, you got your jelly beans, your Creme Eggs, but "Peeps" are just so easily portable and they come in cool shapes. If you don't want to get out in the crowd at the store to grab some...you can make them at home...perfect for some time with the kids!
Marshmallow "Peepz" by Chef Francisco Migoya
Yields about 30 pieces
Ingredients (Many measuring spoons have the "gr" measurment:)
300 gr. egg whites, room temperature
450 gr. sugar
150 gr. corn syrup
150 gr. water
15 gr. powdered gelatin, bloomed in
90 gr. cold water yellow food coloring , as needed
100 gr. confectioner's sugar combined with 100 gr. cornstarch
For the yellow sugar:
200 gr. granulated sugar
Yellow food coloring, as needed
Directions:
1. Line a sheet pan with parchment paper.
2. Sift confectioner's sugar and cornstarch mix over prepared pan. Combine sugar, corn syrup and water in a small pot. Over high heat, cook to 311 F. While sugar reaches this temperature, place egg whites in a small mixing bowl and whip on medium speed. Once sugar reaches the desired temperature, remove from heat and mix in bloomed gelatin, stirring vigorously with a whisk.
3. Increase mixer speed to high and whip egg whites until they form stiff peaks. Pour sugar and gelatin mixture down the side of the bowl while the machine is running. Continue to whip until meringue cools.
4. Once cooled, stir in food coloring. Add until you obtain a bright yellow color. Pour into a piping bag (or large Ziploc bag) fitted with a plain piping tip.
5. Pipe onto prepared sheet pan. Immediately after piping, sprinkle yellow sugar on top.
6. Let marshmallows set at least 2 hours.
7. Using melted chocolate and a toothpick, paint the eyes on the "peepz."
8. Reserve in a dry airtight container.
